HACCP IN HOSPITALITY AND TOURISM EVOLUTION AND INTERNATIONAL APPLICATION

This study examines the evolution and international application of HACCP within hospitality and tourism, focusing on how a preventive food safety framework has developed into a widely adopted operational system. The research is based on qualitative analysis of secondary data derived from peer-reviewed scientific literature, academic publications, and institutional sources accessed through established academic databases. Historical, descriptive, deductive, and comparative methods are applied to analyses the system’s development, its application across different environments, and its performance under varying conditions. The findings indicate that international expansion does not result in uniform implementation. Effectiveness depends on regulatory frameworks, organizational capacity, resource availability, and operational discipline. Formal adoption alone does not ensure consistent outcomes, while integration into daily operational routines significantly enhances reliability. Differences in organizational scale, workforce structure, and regulatory oversight contribute to uneven application across hospitality systems. The study demonstrates that HACCP strengthens the credibility and stability of hospitality services by introducing structured control and predictability. Its international relevance lies in its ability to function within diverse and complex environments, where outcomes depend on consistent application rather than formal recognition alone.
